Ingredients
  

For the Patties:

  • pounds ground Wagyu beef​
  • 1 teaspoon kosher salt​
  • ½ teaspoon freshly ground black pepper​
  • ½ teaspoon garlic powder​
  • ½ teaspoon smoked paprika​

For the Toppings:

  • 4 slices aged cheddar cheese​
  • 1 large onion thinly sliced​
  • 2 tablespoons butter​
  • 4 brioche buns​
  • 1 cup arugula​

Truffle aioli (recipe below)​

  • For the Truffle Aioli:
  • ½ cup mayonnaise​
  • 1 tablespoon truffle oil​
  • 1 teaspoon lemon juice​
  • 1 small garlic clove minced​
  • Salt and pepper to taste

Instructions
 

Form the Patties:

  • Mix Wagyu beef with salt, pepper, garlic powder, and paprika. Shape into 4 burger patties.

Caramelize the Onions:

  • Cook sliced onions in butter on medium heat until golden and soft (about 15 minutes).

Make the Truffle Aioli:

  • Whisk mayo, truffle oil, lemon juice, and minced garlic. Season with salt and pepper.

Cook the Patties:

  • Grill or pan-fry each patty for 3–4 minutes per side. Add cheddar slices in the last minute to melt.

Toast the Buns:

  • Butter the brioche buns and toast until golden.

Assemble the Burger:

  • Spread truffle aioli on buns → add arugula → place the cheesy patty → top with caramelized onions → close with the bun and serve.
