Ingredients
  

Crust:

  • 2 cups graham cracker crumbs
  • ½ cup unsalted butter melted
  • ¼ cup granulated sugar
  • ½ cup finely chopped pecans

Cheesecake Filling:

  • 24 oz full-fat cream cheese softened
  • 1 cup granulated sugar
  • 1 tsp vanilla extract alcohol-free
  • 3 large eggs
  • 1 cup sour cream

Caramel Sauce :

  • 1 cup sugar
  • ¼ cup water
  • ½ cup heavy cream
  • 2 tbsp unsalted butter
  • Pinch of salt

Topping:

  • ½ cup caramel sauce
  • ½ cup semi-sweet chocolate chips
  • ½ cup pecan halves

Instructions
 

Prepare the Crust

  • Combine graham crumbs, sugar, pecans, and melted butter. Press firmly into a springform pan. Bake at 325°F (160°C) for 10 minutes. Let cool.

Make the Caramel Sauce

  • Heat sugar and water until golden brown. Remove from heat, carefully whisk in cream, butter, and salt. Let it cool.

Make the Filling

  • Beat cream cheese until smooth. Add sugar, vanilla, eggs (one at a time), and sour cream. Mix until combined.

Assemble

  • Pour half the filling over crust. Drizzle with caramel. Add remaining filling and smooth the top.

Bake

  • Use a water bath. Bake at 325°F for 55–60 minutes until nearly set. Cool in oven for 1 hour, then chill for at least 4 hours.

Add Toppings

  • Before serving, drizzle with caramel and melted chocolate. Top with pecan halves.
