Blondies:
- 1 cup fresh strawberries diced
- 1/2 cup unsalted butter halal-certified, melted
- 1 cup granulated sugar
- 2 large eggs
- 1 tbsp lemon juice
- 1 tsp lemon zest
- 1 tsp alcohol-free vanilla extract
- 1 cup all-purpose flour
- 1/2 tsp baking powder
- 1/4 tsp salt
Glaze (Optional):
- 1/2 cup powdered sugar
- 1 tbsp lemon juice
- 1 tsp strawberry puree
Preheat oven to 350°F (175°C) and line an 8x8-inch pan with parchment.
In a bowl, mix melted butter and sugar. Add eggs, lemon juice, zest, and vanilla.
In another bowl, whisk flour, baking powder, and salt. Combine with the wet mixture.
Gently fold in diced strawberries.
Pour batter into the pan and smooth the top.
Bake for 28–32 minutes or until golden and set.
Cool completely. Mix glaze ingredients and drizzle on top. Slice and serve.
