Ingredients
  

For the Chicken:

  • 1 whole halal Jidori chicken 3–4 lbs
  • 2 tbsp olive oil
  • 1 tsp sea salt
  • ½ tsp black pepper
  • 4 sprigs thyme
  • 2 sprigs rosemary
  • 1 garlic bulb halved
  • 1 lemon quartered

For the Glaze:

  • 3 tbsp white miso paste halal-certified
  • 2 tbsp honey
  • 1 tbsp halal soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp freshly grated ginger
  • 2 tbsp chopped parsley

Instructions
 

  • Preheat oven to 375°F (190°C).
  • Prep the chicken: Pat dry, then rub with olive oil, salt, and pepper. Stuff with herbs, garlic, and lemon.
  • Place chicken breast-side up on a rack over a baking dish.
  • Roast for 75 minutes, basting every 20 minutes. Chicken is done when internal temperature reaches 165°F (74°C).
  • Make the glaze: Combine miso, honey, soy sauce, vinegar, and ginger in a saucepan over medium heat. Stir until smooth; add parsley and remove from heat.
  • Brush glaze on chicken during the final 10 minutes of roasting.
  • Rest for 10 minutes before slicing and serving.
