One-Pan Honey BBQ Chicken Rice

Ingredients
  

  • 1 lb boneless skinless chicken thighs or breasts
  • 1 tbsp olive oil
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • ½ cup BBQ sauce
  • ¼ cup honey optional for extra sweetness
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt & pepper to taste
  • Chopped green onions for garnish

Optional Add-ins:

  • 1 cup corn peas, or diced bell peppers

Instructions
 

Sear the Chicken

  • Heat olive oil in a large skillet over medium heat. Season chicken with salt and pepper. Sear 5–7 minutes per side until golden brown. Remove and set aside.

Toast the Rice

  • In the same skillet, add rice. Stir for 1–2 minutes until slightly golden and fragrant.

Add Liquids

  • Pour in chicken broth and BBQ sauce. Stir in honey, garlic powder, onion powder, and any optional veggies.

Simmer

  • Nestle the chicken back into the skillet. Bring everything to a simmer, cover, and reduce heat to low. Cook for 18–20 minutes, until rice is tender and liquid is absorbed.

Rest & Serve

  • Turn off heat, keep covered for 5 minutes. Fluff the rice, garnish with green onions, and serve hot.
