- 1 lb boneless skinless chicken thighs or breasts
- 1 tbsp olive oil
- 1 cup long-grain white rice
- 2 cups chicken broth
- ½ cup BBQ sauce
- ¼ cup honey optional for extra sweetness
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt & pepper to taste
- Chopped green onions for garnish
Optional Add-ins:
- 1 cup corn peas, or diced bell peppers
Add Liquids
Pour in chicken broth and BBQ sauce. Stir in honey, garlic powder, onion powder, and any optional veggies.
Simmer
Nestle the chicken back into the skillet. Bring everything to a simmer, cover, and reduce heat to low. Cook for 18–20 minutes, until rice is tender and liquid is absorbed.
Rest & Serve
Turn off heat, keep covered for 5 minutes. Fluff the rice, garnish with green onions, and serve hot.
