For the Crust:
- 1 ½ cups 150g graham cracker crumbs
- ¼ cup 50g granulated sugar
- ½ cup 115g unsalted butter, melted
For the Filling:
- 16 oz 450g Philadelphia cream cheese, softened
- ¾ cup 90g powdered sugar
- 1 tsp vanilla extract alcohol-free
- 1 cup 240ml heavy whipping cream, cold
- 1 tsp lemon zest optional
Make the Crust:
In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Press the mixture firmly into the base of a springform pan or pie dish. Chill while preparing the filling.
Prepare the Filling:
Beat cream cheese until smooth. Add powdered sugar and vanilla extract, and mix well. In a separate bowl, whip the cold heavy cream until stiff peaks form. Fold the whipped cream into the cream cheese mixture. Add lemon zest if desired.
