Ingredients
  

  • 2 cups diced potatoes Russet or Yukon Gold
  • 6 large eggs
  • 1 cup shredded cheese cheddar, mozzarella, or blend
  • 2 tbsp butter or oil
  • Salt and pepper to taste
  • 2 tbsp milk or cream optional, for fluffier eggs
  • 2 tbsp chopped green onions or herbs optional garnish

Instructions
 

Prep the Potatoes

  • Dice potatoes into small cubes. If using frozen potatoes, thaw and pat dry.

Sauté the Potatoes

  • In a large skillet, heat butter over medium heat. Add potatoes and cook until golden and crispy (8–10 minutes).

Whisk the Eggs

  • In a bowl, beat the eggs with milk (if using), salt, and pepper.

Scramble the Eggs

  • Push the potatoes to the side of the pan. Pour eggs into the open space. Let them sit for 30 seconds, then scramble gently.

Add Cheese

  • Once eggs are nearly set, sprinkle the cheese over eggs and potatoes. Stir gently until melted.

Garnish and Serve

  • Top with chopped green onions or herbs. Serve hot!
